The sleek design is mirrored in the unique cocktail menus, with a selection of classic and signature cocktails available, including The Botanical Negroni cocktail, a delicate version of a classic Negroni that uses a Liverpool Gin base cocktail along with Suze and Lillet Blanc. The Botanic Negroni is theatrically prepared in front of the guests and served with a sprig of Thyme. The cocktail is based on the legacy of Liverpool’s famous Botanists, of which William Henry Duncan, who has significantly contributed to the development of treatments for tropical diseases.

In addition to signature cocktail there is also a Tea Service menu – a selection of cocktails inspired by teas from across the world. Highlights include the Breakfast Martini, a blend of Tito’s vodka, English breakfast tea syrup, lemon juice and lemon curd, and the Little Lie Down, the perfect cocktail for reviving weary guests – made with Tanqueray gin, Rinquinquin, chamomile tea, pink peppercorn tonic and prosecco.

Nestled behind Palm Court is the tranquil Seaforth, a beautiful British brasserie with a worldly exotic twist, inspired by Liverpool’s historical trade past. Menus have been created with global influences, offering guests colourful and inventive dishes that feature the very best of Liverpool’s connections to land and sea.

The 50-cover restaurant is open from breakfast through to dinner, with menu highlights including the iconic Liverpool Scouse the city is famed for – lamb cooked three ways with roasted and minted potatoes, carrot and swede, red cabbage and red wine jus, as well as chef’s signature Scallion Crusted Cod of Loin, served with braised bok choy, mango salsa, ginger and lotus root. All dishes will be led by the seasons, with the best of local produce used where possible.

Guests can enjoy the sacred ritual of Afternoon Tea in the opulent Botanic Tearoom, where tea sommeliers work to create memorable taste experiences for guests in a floral haven in the heart of the city. The Afternoon Tea will feature a mixture of sweet and savoury British specialties, including a selection of fresh homemade pastries, cakes and sandwiches that regularly change to reflect the seasons.

All Botanic Tearoom’s scented teas are naturally fragranced with fresh flowers or natural oils to create vivid aromas and timed to perfection using traditional hourglass timers. A full Tea Service menu of specialty tea inspired cocktails are also available to enjoy, alongside a menu of sparkling wines. Afternoon Tea runs from 12-6pm, with last bookings at 5pm, with prices starting from £33 per person midweek.
